Gluten-Free Dining

At Twilight Pizza Bistro, we understand that dining out can be frustrating for those who must follow a gluten-free diet.  We feel it’s important to cater to the needs of those with celiac disease or those simply trying to reduce their consumption of gluten.  Our desire to meet this need started when one of our friends came to eat at our restaurant and there was very little she could eat—she had celiac disease.  We felt such regret about our inability to feed our friend foods that wouldn’t hurt her that we began educating ourselves about celiac disease and what was required of us to meet the needs of persons affected. 

We have taken the time to educate our staff on the severity of celiac disease and the importance of clean workstations and other equipment involved in preparing gluten-free meals.  Please make sure to clarify with your server that your meal must be entirely gluten-free.  Communication is always the best way to make sure that you have a positive experience! 

Our gluten-free offerings include Green’s Gluten-Free Ales, Spire Mountain Hard Cider, Annie’s Naturals Dressings, French Meadow Bakery Pizza Crust (in 10” only), Tinkýada Brown Rice Pastas, and several of our housemade dessert offerings. 

Most of our regular menu items can be made gluten-free, with the exception of a few items that are prepared in advance with flour.  For example, we use roux—a mixture of butter and flour—to thicken our housemade Clam Chowder, the sauce for our Baked Seafood Pasta, and our Lasagna, which is prepared in advance with regular pasta.  However, if you have you heart set on Lasagna, ask the server for our Baked Penne Twilight and ask them to prepare it with gluten-free penne pasta, which we have available most days.

Please feel free to call ahead and ask any questions you may have.  If you call ahead prior to dining with us, we can discuss your gluten-free options.  We have made sure that when you dine with us, you can enjoy a full meal, from salad to appetizer to entrée, beverage and dessert, entirely gluten-free.
